
Chocolate chip pizza cookie
I have posted about chocolate chip cookies before, but I am a fan of taking things to another level. So I thought why not make a giant version. This is a great recipe if you want to have a fun night in with the children (or, of course, us adults). I personally love serving it with some vanilla ice cream right in the middle.
Ingredients
- 150 g salted butter softened
- 80 g light brown muscovado sugar
- 80 g granulated sugar
- 2 tsp vanilla extract
- 1 large egg
- 225 g plain flour
- ½ tsp bicarbonate of soda
- ¼ tsp salt
- 200 g plain chocolate chips or chunks
Instructions
- Preheat your oven to 200°C.
Place all ingredients, except the chocolate chips, in the mixing bowl then knead 1 Min. / Kneading function.
Add the chocolate chips and mix 20 Sec. / Reverse / Speed 2.
- Place the dough into a cast iron dish and spread evenly. Bake for 15-20 minutes until lightly browned but still soft in the middle.
The cookie will harden as it cools. Dig in while it's still warm!

Made this tonight – big hit! set oven to 185C Fan Forced and baked for 25 mins, in a round, solid-bottomed, pizza tray. The dough did spread over the sides and fell into the roast potatoes on the shelf below so next time will free form on a bigger tray! Tasted fabulous – cruchy edges and fudgy middle and so little work!
Subsituted raw sugar for the muscavado.
