These fortune cookies are the perfect party snack. Great for a large crowd and super simple recipe to follow. Happy Chinese New Year! Making fortune cookies is so much fun and especially if you are planning an evening with friends and family, these  fortune cookies are a great way to create some entertainment on the dining table and can be made using your Thermomix.

Just make sure to be very careful when the cookies are just coming out of the oven, they will be soft and very hot but you need to handle them very quickly before they dry and harden. It is definitely best, if you have some time, to only make one cookie at a time to avoid having to rush the process.

Ingredients

  • 100 g plain flour
  • 20 g cornflour
  • 50 g golden caster sugar
  • 1 tsp salt
  • 30 g vegetable oil
  • 3 egg whites use yolks to make custard
  • 5 g water
  • 1 tsp vanilla extract

Instructions

  1. Take 6cm strips of paper and write out some fortunes. This recipe will make about 12 fortune cookies.
  2. Preheat the oven to 170°C / 150°C Fan / Gas Mark 3. Either line a rectangular tray with a silicone baking mat or use a non stick baking tray.
  3. Place the plain flour, cornflour, golden caster sugar, salt, vegetable oil, egg whites, water and vanilla extract in the mixing bowl. Mix 30 Sec. / Speed 5.
  4. Pour into a jug and place 1 tablespoon of the mixture onto the centre of the tray or silicone mat. Use the back of a metal spoon to swirl out the mixture into a 10cm circle. It should be very thin and round. Bake for 10 minutes. The outer edge of the spatula should be golden and it should be easily removable with a spatula.
  5. Remove the cookie and immediately place the fortune in the centre, fold it in half and  place the folded edge of the cookie onto the rim of a cup. Gently pull the two corners down, one on the inside of the cup and one on the outside. 

  6. Place the cookie inside a muffin tin to keep the shape and leave to cool. Repeat with the remaining cookies. Enjoy!
