These pink meringue kisses are the perfect little gift for your loved one at Valentine's Day. Wrap them cutely or present in a box. This is a super easy recipe using your Thermomix. I love the idea of something homemade for Valentine's Day and while I was working on my next book, I found a great way to make meringue look a lot more appealing and came up with the idea of little kisses for Valentine's. 

Everyone likes to get a little kiss or two so why not make some sweet kisses with meringue and wrap them cutely to give to your loved one? There are endless possibilities for these pink meringue kisses. 

Whether you add some raspberry extract, coconut extract, peppermint extract or any other flavouring you like, they are definitely a hit with meringue fans. You can also add different colourings, such as yellow, blue, or even lots of rainbow colours. Time to get creative. Ingredients

  • 4 egg whites
  • 2 tsp cream of tartar
  • 200 g unrefined golden caster sugar
  • 1 tsp vanilla extract
  • 2 tsp  cornflour
  • a few drops pink food colouring or gel colouring

Instructions

  1. Preheat the oven to 50-80°C.
  2. Insert the whisk attachment into the clean mixing bowl and place the egg whites and cream of tartar in the mixing bowl. Whisk 4 Min. / 37°C /  Speed 3.5.
  3. Whisk again 5 Min. / 37°C / Speed 3.5 and very slowly, every 20 seconds, add 1 Tbsp of the caster sugar through the lid.
  4. Add the vanilla extract and cornflour and whisk 1 Min. / Speed 3.
  5. Prepare your piping bag by using a wooden skewer to paint stripes of the gel colouring down the inside of the bag. Fill it with the meringue and pipe little dollops of the meringue onto a baking tray lined with greaseproof paper. Bake in the oven for 2-3 hours until they feel dry to the touch. Turn off the oven and open the door slightly and leave them to cool in there before removing them. Store in a dry place for up to 4 weeks. Enjoy!
