These Thermomix  Butter Cookies are the best gluten free and chocolatey cookies out there. The quickest recipe using your Thermomix and the gooiest cookies ever. 

Today is St. Nicholas day and in Germany we celebrate it with some cookies and mulled wine. Traditionally, the kids put  their shoes outside and St. Nicholas will come to fill them up with chocolates and goodies (only if you have been good this year). Today, I have prepared my favourite Santa cookies. 

These Peanut Butter cookies are not only gluten free and have only 5 ingredients, they are ready in 30 seconds. What a wonderful recipe for busy mums who need to prepare some snacks for Santa who will drop off the presents on his sleigh and needs a bit of energy with a glass of milk and these super tasty cookies before moving on this Christmas Eve. But be careful, there might be some cookie thieves not far because these cookies are way too good. 

You can use any nut butter you want. Even almond butter or cashew butter will work well for this recipe.

Ingredients

  • 200 g crunchy peanut butter homemade or store bought
  • 175 g golden caster sugar
  • 1 pinch sea salt flakes
  • 1 egg
  • 200 g dark chocolate chips

Instructions

  1. Preheat the oven to 190°C / 170°C Fan / Gas Mark 5. Line two large rectangular tins with greaseproof paper. My Rose Gold Baking Trays are perfect for this.

  2. Place the peanut butter, caster sugar, sea salt flakes and egg in the mixing bowl. Blitz 20 Sec. / Speed 5. Add the chocolate chips and combine 10 Sec. / Reverse Speed 3. If the chocolate chips are not fully incorporated. simply help a bit with your spatula.
  3. Take tablespoons of the mixture between your hands and form into a ball. Press them down into a cookie on the prepared trays, leaving about 3cm in between each cookie.
  4. Bake in the oven for 10-12 minutes until lightly golden but still quite soft. They will harden as they cool. Remove from the oven and leave to cool. They store well in a cookie jar for up to 2 weeks. A great treat for Santa. Enjoy!

      You could try honey and banana instead. 1 banana and 1 Tbsp honey may make it work as well xx

    Lovely recipe but I must say 200 grams of choc chips is far too much, ended up throwing half of them away even after trying to combine with the spatula. Also managed to make 10 cookies but they are naughty!
