Thermomix Brownie Nice Cream

Who doesn’t love ice cream? Especially the beautiful Thermomix Brownie Nice Cream. The recipe is so easy and just amazing, it’s a healthy version of chocolate ice cream – don’t tell the kids it’s healthy though, they’ll love it. The brownies are just so good anyway and so is the ice cream but when you combine the two, it is out of this world yumminess! You can also use any other brownies you like, for example my peppermint brownies or the classic brownie.


Thermomix Brownie Nice Cream

Avocado Brownies

  • 1 avocado, flesh only
  • 50g coconut oil, at room temperature
  • 1 larg egg
  • 150g maple syrup
  • 1 tsp vanilla extract
  • 85g cocoa powder
  • 1 pinch fine sea salt
  • 30g plain flour (or gluten free plain flour)
  • 200g dark chocolate chips or cacao nibs

Healthy Chocolate Ice Cream

  • 3 bananas, halved
  • 1 avocado, flesh only
  • 100g agave nectar
  • 50g cocao powder 
  • fresh berries for serving


  1. For the brownies, preheat the oven to 180C / 160C Fan / Gas Mark 4. Line a 20cm square tin with greaseproof paper and set aside.
  2. Place the avocado, coconut oil, egg, maple syrup, vanilla extract, cocoa powder, salt and flour in the mixing bowl. Combine 20 Sec. / Speed 5. Add the cacao nibs or chocolate chips and mix again 10 Sec. / Reverse Speed 3.
  3. Pour the mixture into the prepared tin and bake in the oven for 20 minutes. They are very gooey at this stage, you can leave them for a little while longer, but they can get a little bitter. Remove and leave to cool on a wire cooling rack.
  4. For the ice cream, place the bananas, avocado, agave nectar and cocoa powder in the TM bowl and chop 20 Sec. / Speed 7.
  5. Pour the mixture into a freezable container and add about 1/2 of the cooked and cooled brownies, broken into pieces. Stir them through the mixture.
  6. Freeze overnight. Serve the next day with extra brownies and fresh berries. Enjoy!
