Thermomix pizza wheels

Make these delicious Thermomix Pizza Wheels at home for the kids and the whole family. They are a great recipe for leftovers the next day as well. When I was younger we used to make pizza a lot. Me and my oldest childhood friend were always in charge of the topping and we absolutely loved pizza for dinner. My mum sometimes did not have the time to make the dough herself so she used the store bought puff pastry, which was also very good but it is even better if you can make your own. These Thermomix pizza wheels are made with rough puff pastry, which is a bit different to the traditional puff pastry. It is a lot less hassle and combines the butter with the dough already instead of folding it in separately. You will still get such a nice and flaky pastry but just without all the hassle. Better for a quick dinner snack. You can even prepare this pastry in advance and freeze. Thaw when needed. For the filling you can be very imaginative. Get the kids involved and let them decide what toppings they like. If you put them in charge, you can really get them to be creative and engage with healthy ingredients such as peppers, sweetcorn or tofu. Chop the ingredients for topping into bite sized chunks and let them do the rest. It is a great way to keep the kids occupied. These little Thermomix pizza wheels are also a great lunchbox snack for the next day and can be served cold. If you don't want to bake all of the pizzas at the same time, you an freeze them before brushing with the egg.

Ingredients

Rough Puff Pastry:

  • 200 g ice cold butter chopped into small chunks
  • 200 g plain flour
  • 90 g cold water
  • 1/2 tsp salt

Thermomix Pizza wheels:

  • 70 g tomato puree
  • 1 tsp oregano
  • 50 g salami
  • 50 g cheddar cheese
  • 1 egg

Instructions

  1. To make the rough puff pastry, place the ice cold butter, plain flour, ice cold water and salt in the mixing bowl and mix 20 Sec. / Speed 6.
  2. Place onto a generously floured surface and form into a ball. It will be very sticky so just be sure to handle it quickly. Shape into a square and wrap in clingfilm. Refrigerate for 30 minutes.
  3. Remove, unwrap and place onto a floured surface. Roll out to a rectangle about 20x50cm. Fold over the bottom third and then the top third. Turn so that the seam side faces you. Repeat the rolling, folding and chilling process.
  4. Preheat the oven to 180°C.
  5. Roll out the pastry to a large rectangle. Start by spreading over the tomato puree, followed by the salami slices and finished off with some grated cheese. You can vary the topping according to your liking.
  6. Roll up the pastry to a large log and cut into bite sized pieces.
  7. Place on a large baking tray lined with greaseproof paper.
  8. Crack the egg in a bowl and whisk slightly. Brush over each pizza wheel and bake in the oven for 10-15 minutes until golden brown. Serve immediately. Enjoy!
